Whole bunches underwent wild fermentation in open fermenters, with carbonic maceration enhancing fruit purity. The wine was gently pressed into stainless steel and aged on lees for four months, building a silky texture before bottling. Colour Cloudy magenta. Aroma Dark cherries and plums, with a hint of fresh raspberry.
